Learn Your Dried Chiles and Never Burn Your Mouth Again

Dried chili peppers can add a lot of flavor to a dish, but they’re not all alike. If you have trouble telling your chipotles from your anchos, and even worse mix them up in your cooking, this quick video from our friends at America’s Test Kitchen will sort it out for you.


It’s important to note that the video highlights multiple types of dried peppers, and the actual variety of chili peppers is actually much broader than the four featured above. However, these are four you can likely find in any grocery store almost anywhere, especially the canned chipotles in adobo, which you can get any time of year and are specifically versatile. Plus, now you’ll know which types of peppers are best ground up and added to spice rubs or pots of chili, rehydrated and added to soups or burgers, or best prepared with gloves on so you don’t hurt your hands.
